Project description
The "ECUISINE: Learning by Cooking" project aims to enhance the attractiveness of vocational training in catering schools and better prepare students for international work placements. By developing an innovative e-learning course, the project bridges the gap between culinary skills and language acquisition, addressing the critical barriers students face, such as lack of foreign language knowledge and cultural preparation.
Led by the French institution GIP FCIP de Basse Normandie, the project brings together partners from France, Germany, Poland, and the UK. Co-financed by the European Union under the Leonardo da Vinci Lifelong Learning Programme, the project is based on the earlier success of "Integratour," a 2007 Franco-German initiative. This previous project highlighted the need for tools to support international mobility among students of vocational catering schools, particularly in acquiring practical skills and industry-specific vocabulary.
The key output of the "ECUISINE: Learning by Cooking" project is an e-learning course featuring instructional videos where professional chefs demonstrate step-by-step preparation of traditional dishes from the partner countries. This course integrates language learning with culinary training, offering students linguistic and cultural preparation to enhance their work placement experiences abroad. Through the use of the Moodle platform, the course will be widely accessible and adaptable to various curriculums and student needs.
The "ECUISINE: Learning by Cooking" project successfully merges the joy of cooking with the essential skills needed for students to thrive in the international catering industry.
Objectives
Enhance vocational training in catering schools by developing an engaging e-learning course that integrates culinary skills with language learning.
Prepare students for international work placements by equipping them with essential vocational vocabulary and cultural knowledge in four languages: English, French, German, and Polish.
Promote student mobility within the catering industry by offering innovative tools that overcome language barriers and cultural differences.
Increase the employability of catering students by providing practical, hands-on training combined with language skills to work abroad in professional kitchens.
Support educators by offering flexible, adaptable teaching materials to enrich their workshop training.
Target group
The primary target group includes students of vocational catering schools, particularly those aiming for international work placements. Secondary target groups are educators who can use the course to supplement their teaching, as well as amateur cooks looking to enhance their culinary skills while learning foreign languages.
Results
Overall results of the project include:
Development of an e-learning courses on the Moodle platform, featuring instructional cooking videos, quizzes, and language support tools.
Increased student participation in international placements, overcoming the language and cultural barriers previously limiting mobility.
Enriched educational tools for catering educators, allowing them to adapt and integrate the course into their teaching practices.
Creation of a multilingual glossary and quizzes to help students learn essential culinary vocabulary in four languages.
Improved employability of students by combining practical culinary training with language and cultural preparation, thus better equipping them for work abroad.

The portal offers an interactive and engaging platform designed to enhance vocational training in catering schools. Through instructional cooking videos, specialized vocabulary, and cultural preparation, it equips students with the practical and language skills necessary for successful work placements abroad. Available in 4 languages i.e. English, Polish, French and German.
The YouTube channel showcases step-by-step
instructional videos led by professional chefs, demonstrating the preparation of dishes

The blog provides insights into culinary techniques, cultural food traditions, and experiences from vocational training placements abroad. It also offers updates on the project's progress and tips for mastering both cooking skills and language preparation for the catering industry.
